Our take on the classic paloma cocktail featuring smoky Dry Point Agave Spirit from Las Cruces, organic cold-pressed grapefruit juice from Verde Juices, and house-infused mint syrup
1 ½ ounces Dry Point Agave Spirit
2 ounces Verde organic grapefruit juice
½ ounce fresh-squeezed lime juice
½ ounce fresh-squeezed lemon juice
½ ounce mint-infused simple syrup
Fresh mint, to infuse and for garnish
Fresh grapefruit, for the rim and for garnish
In a pan, heat 1 cup of simple syrup (one part water one part sugar) to a boil.
Remove from heat and add 15 fresh mint leaves to infuse.
Let the infusion cool then filter through a fine strainer.
Peel a fresh grapefruit so you only have the flesh.
Thinly slice the flesh and dehydrate it until dry.
Add the dried grapefruit to a blender and pulse for a few seconds to crush it.
Apply a layer of mint-infused syrup to the rim of a margarita glass, then dip the glass in the dried grapefruit mixture.
In a shaking glass, combine the Dry Point agave spirit, Verde grapefruit juice, lime juice, lemon juice, and mint-infused syrup with ice.
Shake well for 10 seconds.
Double-strain the drink into the margarita glass.
Add ice to fill and garnish with a fresh mint sprig and a fresh grapefruit wedge.
