Peaches and Cream
VARA Vinoteca Bar Team
Grilled Peach-Honey Syrup, Lemon, Mint, VARA Fine Alembic Brandy, VARA Silverhead Brut, and Mascarpone Sea Salt Foam
Grilled Peaches (6-8 small chunks muddled in shaker tin)
8 Mint leaves (lightly pressed in shaker tin)
.75 ounces Honey Syrup
1 ounce Lemon
1.5 ounces VARA Fine Alembic Brandy
2 ounces VARA Silverhead Brut
Mascarpone & Sea Salt foam
Combine all ingredients (except Mascarpone & Sea Salt Foam and Brut) in a shaker tin.
Shake and double strain into a chilled Collins glass.
Add Brut, ice, and top off with Mascarpone & Sea Salt Foam and mint sprigs.
